Spinach Salad with Citrus Poppy Seed Dressing

Ingredients

1⁄4 c. agave nectar or honey

1 lemon, juice and zest

1 orange or tangerine, juice and zest

1⁄2 c. canned mandarin orange juice

1 Tbsp. white wine vinegar

1 tsp. dry mustard

1⁄2 tsp. celery salt
-
1⁄2 tsp. Paprika
-
1⁄2 c. canola or safflower oil
-
1⁄2 tsp. poppy seed
Salad:
-
1 c. spinach or salad greens
-
1⁄2 c. small curd cottage cheese
-
2 Tbsp. mandarin orange segments
-
3-4 sliced strawberries
-
1 Tbsp. crumbled blue cheese or gorgonzola cheese

Sliced almonds (optional)
Directions
Place Emulsifying Disk in food processor bowl. Add first 8 salad dressing ingredients and pulse 3 to 4 times to combine. With processor running, gradually add oil in a steady stream through feed chute; mix until smooth.
Remove Emulsifying Disk and stir in poppy seeds.
Divide spinach or salad greens onto 8 salad plates. Top evenly with cottage cheese, mandarin orange segments, strawberries and crumbled blue cheese.
Drizzle 2 Tbsp. dressing over the top of each salad. Garnish with sliced almonds, if desired.
Recipe Note
Cook's Tip:Place salad greens on large platter and serve with the dressing on the side.
