Ingredients

3 cups cooked shredded chicken

2 (10 oz) bags shredded cabbage

1 radicchio, chopped
-
2 large carrots, julienned with julienne blade

2 green onions, chopped
-
Cooking spray
Sauce:
-
2 ½ Tbsp. peanut butter
-
3 Tbsp. rice vinegar
-
4 Tbsp. soy sauce
-
2 tsp. hoisin sauce
-
1 Tbsp. honey
-
½ tsp. fish sauce
-
1 Tbsp. grated ginger
-
½ Tbsp. minced garlic
Directions
In a large bowl toss together the salad ingredients.
In a small bowl whisk together the sauce ingredients and pour over the salad mixture.
Toss well to coat the salad mixture with the sauce.
Serve immediately or cover and refrigerate for a few hours to allow the flavors to blend together.
