Ingredients

1 medium red pepper, diced with dicing blade

1 medium yellow pepper, diced with dicing blade

1 large tomato, diced with dicing blade

1 English cucumber, diced with dicing blade

1 cup loosely packed flat leaf parsley, finely chopped

1 cup loosely packed mint, finely chopped

3 cups cooked quinoa

1 Tbsp. minced garlic

2 lemons, juiced

2 Tbsp. chicken stock

Salt and pepper to taste
Directions
Place all ingredients, except garlic, lemon juice, chicken stock and salt and pepper into a large bowl. Toss together.
In a small bowl, mix together the minced garlic, lemon juice and chicken stock. Pour over the quinoa mixture and toss to coat.
Season with salt and pepper and serve.
Recipe Note
Note: the longer the salad is refrigerated, the better the flavoring becomes.
