Ingredients

1⁄2 ripe cantaloupe melon, seeded, peeled and cut into chunks (about 3 cups)

1⁄2 c. almond milk

1⁄2 c. plain Greek yogurt

1⁄4 tsp. ground nutmeg

Pinch Salt

1⁄2 c. jicama, peeled and diced
Directions
Place melon in medium bowl. Puree with the Immersion Blender until smooth.
Add almond milk, yogurt, nutmeg and salt. Blend on low until combined.
Top with a tablespoon of diced jicama and a dash of nutmeg before serving.
Recipe Note
TIP: Use remaining jicama as a sweet and juicy crunch to any summer salad.
